Firstly , exclude 5820k. I wouldn't pick it.
Now, if it's a question between 6700k and 6800k. For gaming i would pick 6700k. I have one myself and I don't have any problems. As you can see in the video the benchmarks are head on, 6700k wins sometimes just because it has more GHz per core. It all depends on the application/game. If they can utilite ALL cores , then 6800k wins. Else it's 6700k .
Also 6700k is more power efficient with 91W vs 140 of 6800k.
For motherboard i can tell you for 6700k that my ROG maximus viii formula is stable, has nice looks, RGB lights and temps are very pleasing!

Edit: Forgot to tell you that i had some issues with my build at first that the ASUS tech guy...

Edit: Forgot to tell you that i had some issues with my build at first that the ASUS tech guy insisted it was from my cpu, according to him some 6700k have issues with their motherboards and RAM support, can't explain fully it will be too long. Anyway it got fixed for me with a BIOS update.

The 6700k is the better choice for gaming. Even on the same freq the IPC is a bit higher. The only real benefit of a 6800k are the extra pci lanes. If you are interested on doing a triple sli or something like that. Which by the way seems it is no longer the case for Nvidia cards.

Now if you are using the system for anything like rendering then the x99 has an edge because at any point you could buy one of the higher core count models of xeon or extreme cpu.

Look, it really depends on how much video editing you would be doing, but to be honest, gaming-wise there isn't that much of a difference between the 5820K and the 6700K - sometimes the 5820K beats the 6700K and other times it's the opposite - all within margin of error though. When it comes to video editing, however, 6 cores make themselves felt compared to 4 cores, because of the parallel nature of processing involved in processing video. The 5820K outperforms the 6700K in video editing tasks.

There's a considerable difference between rendering on 4 physical cores and rendering on 6 of them. Even if those 4 cores are somewhat newer. If you plan on using Adobe Premiere, After Effects and the like, the 5820K would be a better choice.
Plus, the 2011-3 boards support 128GB of RAM - video rendering is known to be CPU-intensive, RAM-hungry and it's also disk-stressing - the reason I'd recommend you use an SSD (preferably a PCIExpress / NVMe one).
Having said that, I believe this would better suit you and be more futureproof than the alternative, even though the alternative is newer.
Don't be fooled by the specifications on the website, check ASUS' official page and the support section and you'll see what the board actually supports.
