Z170 or X99? (6700K or 6800K/6850K)

First of all, I know this has been asked plenty of times but should I get a 6700K, 6800K or 6850K?
The build will be used for 4K/1440P gaming, Photoshop and 3D Modelling.
Specs I have decided on:

GPU: 2x Asus STRIX-GTX1080-O8G-GAMING
CPU Cooler: Corsair H100i V2
RAM: Corsair Vengeance LPX 32GB
SSD: Kingston Predator 240GB M.2 & Samsung 850 EVO-Series 500GB
PSU: EVGA SuperNOVA 1000 P2 1000W 80+ Platinum

I'd get the 6 core 6850 if you can swing the price. Because 3d rendering/modeling takes so much less time on a that sort of CPU. I saw a significant improvement in speed when comparing a 4790k and a 5930k.

For most photoshop work, a 4 core CPU is enough. The exception would be large batched workflow or very complex edits. But your typical pull a raw in adjust the levels and export a JPG is not very demanding of the cpu.

Gaming does not currently benefit from 6 cores.

The 6850k will get you as close as you reasonably can to the 6700k while still maximizing your 3d work speed.

And I would suggest your PSU is overkill. A decent 600-750w is all you need.

And will I get the same gaming performance with the 6850K than the 6700K?
 

For now it will be close enough so that you're unlikely to care. If gaming performance is most important get the 6700k in some games it might get you 1-2 more frames per second. In most either cpu will be more than enough.
