Installing Windows with a new product key

I'm trying to do a fresh install of Windows 10 on my desktop, with a new product key (for Windows 8.1 Pro), so I'm not longer using the OEM licensed Windows.

I downloaded the media creation tool, set it for a new computer, rebooted, and began the reinstall process. My problem, however, is that it is automatically installing using the OEM product key in the BIOS. The installation never gives me an option to enter a product key, so I can install Windows 10 with the 8.1 key.

Any suggestions on what to do here?

Considering that key is only valid for that version of Windows you would most likely have to download the ISO from a legitimate source for Windows 8.1 Pro, install that, activate the key, and then install the updates to update to Windows 10.
