Solution
I've fixed the issues. Enabled Performance in BIOS and disabled EPU Power Saving under AI Tweaker, and also I downloaded the latest beta drivers. Running smooth as silk since with no screen lag or massive fps drops.

What should I be looking for exactly in terms of drops ? I never used this kind of software before. Keep in mind the screen lag and FPS drops are not as bad since I changed power plans to performance and disabled EPU power saving. I see that I get high FPS for a period and then it seems to throttle as if it was overheating but it's not. I think you could be right about the GPU not receiving enough power.

That's 2x75 watts + 75W more from the motherboard.
That's the absolute minimum power required to operate under load. Unless you watch YouTube and Netflix and use Word, Excel etc the GPU will use more than 100Watts
