I would strongly encourage you to invest a bit more into the piece of equipment that cools your $350 piece of equipment. Go check out a Silverstone AR05/06 if you really want a low profile cooler.

I am not sure what the fascination of 80mm fans is here, but you are never going to get great cooling with a itty bitty little fan like that.

I looked at the Amazon top selling CPU coolers. I went down that lilst looking for low profile coolers. The first thing you need to do is accept that $35 is probably the lowest price you really want to spend to protect your $350 CPU. Coolers priced less than that are so cheaply made, you will be buying replacement coolers at least every year, and possibly replacing that CPU as well.

After looking at the top 100 Cooling Fan list on Amazon, that is the only low profile cooler I would consider buying. It also comes with a full 6 year warranty.

I was surprised to discover that there was only 1 low profile CPU cooler out there that I would consider buying to protect my I7-6700K CPU. But I know first-hand how vital a good CPU cooler is. I have had my CPU fans die. Some also took out the CPU, while others did not. It is never fun to need to spend $400 to get your computer running again unexpectedly.

I did some research into the Noctua and am going to go with it. It's not quite as low profile but still very good, also considering how much better it should be.

I want a minimalistic look, if at all possible. I don't plan to overclock at all, and I mean that lol (I have had a 3770k for 3 years that I never overclocked). I believe it's feasible based on what I do on my computer (WoW, Overwatch, web browsing, etc.). I'm not an expert but I think a quality low-profile cooler, such as that Noctua NH-L9i MarkW suggested, will be plenty adequate.

Also a quick follow up question. Thinking about getting a 144hz monitor for my new computer. Would running game like wow at 120fps say put a hot & heavy load on my i7 6770k?
 
Uses 2 threads so not massively so mate no.
I still think there are better cooler choices though

No, WoW is not that demanding of a program data-wise, except possibly when in major cities. But they seem to have gotten people out of the cities for the most part by adding Garrisons for people to hang out in.

Just make sure that whatever CPU coioler you end up buying is rated to be able to cool at least 91 TDP, as that is the rating of the I7-6700K CPU. BTW, there is no I7-6770K CPU.
