How would this PC perform on today's AAA titles at 1080p? Will the i3 bottleneck the 480? Is the 480 4GB good enough for current games and future games? Should I upgrade to the 8GB version? Could I overclock the 480 with this 500W PSU? How loud is intel's stock cooler? Is the stock cooler good enough? Are all of these parts compatible?

This is my first build and I'm planning on gaming at 1080p. This would be a $550-ish build without the peripherals. I also plan on waiting for RX 480s with better aftermarket coolers. I just need any other opinions or concerns about this build.

Their no reason to get the 8gb card the 4gb one you picked will work just fine.
If your at the top of your budget you making a mistake.
Get the PSU listed above AND drop the gaming keyboard and or mouse and put that money into the processor and get the i5 6500 / 6600 processor you can add extras later much cheaper than s CPU upgrade.

No bottlenecking, get 8GB, yes you can OC with 500w, stock cooler is good for non-K CPU, compatible.
Maybe you can choose a better quality for PSU if you want to OC

What brand do you recommend for the PSU? Would a 430W PSU suffice?

Is this fine? What difference is there between the 6500 and the 6600? What would happen if I used the EVGA PSU? What benefits do I get with this new PSU? Is the stock cooler fine? I just need a keyboard and this was cheap, so I went for it. Would you recommend a cheaper keyboard?

That should work just fine.
I would stick with the higher quality Seasonic PSU. Never buy low quality unless it's just a must.
For the processors 0.3 turbo speed if i remember right.
I would also be planing to add a regular hard drive in the near future that SSD don't have a lot of space.
