2x vs 4x RAM kits for Dual channel mobos

My mobo is a dual channel 4 dimm and i want to install 16 gigs of 2666mhz ram with skylake proccesor that runs 2133mhz and i was wondering what would be the best option
1. 4x4gb kit 2666
2. two kits of 2x4gb 2666
3. 2x8gb kit 2666

Question 1 :Will the first two options be faster because they use 4 dimms (quad channel-ish ) ?

Question 2: Which option would be the easiest to get running at 2666 without ovetclocking the CPU?

You're actually better off using 2x8GB on a Dual Channel board.
The CPU memory controller is taxed when it needs to handle 4 sticks.

In reality, having the CPU manage 4 sticks instead of 2 has a literally negligible impact on performance.

Yep, this is essentially it.
You'll want to get 2x8GB sticks for dual channel, or however many you need! :)
They typically plug into the second and fourth slots, although every motherboard is different, so give it a double check.
Note that using two also allows for upgradability in the future.
It is only ever worth going for 4 stick if your motherboard runs in quad channel, an example being x99 motherboards.
 
2 v 4 sticks is no performance difference. Unless you are a wizard, it's still dual channel. There is no quad-ish. Info gets split between more sticks but you are still limited by those 2 channels.

You don't need to oc skylake cpu to oc ram.
