Having issues with getting proper RAM speeds

RAM: Kingston Hyperx Fury 1866 8gbx2
MOBO: Gigabyte UD3H-BK

My RAM is showing up as 1600mhz/799 in BIOS and in CPUZ. I tried enabling XMP, but the option is greyed out in my BIOS, and am unable to change the setting. I don't want to get a big overclock, just get it running at its proper speed.

Update: There was a setting for multiplier, and I just put it at 1866. All the other numbers seemed to match what they should be.

Was it really that easy?

Why is XMP used in other scenarios?
