Here's what I would suggest - I wouldn't get a Founder's Edition GPU because they're not that great but I will say grab a 1070 or 1080 when they come in stock because they leave pretty quickly. Also don't buy those EVGA Nex PSUs - they're not good:

Yeah you could but I *ALWAYS* leave the option open for SLI. On that budget you should prepare for it, especially if a monitor upgrade is a future possibility. 4K definitely requires more than 1440P and 1080P do, and VR is a totally different beast as far as requirements go.

You will do good in those too. What screen recorder do you plan on using? Also what editing software? If it's intense I may recommend going with a Xeon

Yeah I think you should be fine. I may recommend a Xeon for faster editing but that's up to you.
