What's my Bottleneck? (AKA "Why aren't I getting more FPS?")

Okay, so I bought a GTX 1080 SC from EVGA, but I'm not getting the same FPS that I've seen in benchmarks, sometimes off by as much as 30-40 depending on the game (I get about 30-40 fewer in Overwatch, 10-20 fewer in Crysis 3, etc), even when compared on the same graphics settings, same resolution, and same CPU, and even when both the CPU and GPU are overclocked beyond stock. I'm a bit stumped at the moment. Specs are below. If you need any more info, just ask.

For example, I get about 100-120 FPS in Overwatch, or about 144 with the resolution scaling turned down to 100% (a step that the benchmark didn't have to do...) vs the 170 min or 179 average benchmark. In Crysis 3, benchmarks with the 1080 are hard to find, but it looks like people are getting around 90-100 FPS, and I'm stuck at right around 60-70. Keep in mind that both my CPU and GPU are overclocked and, in the case of Overwatch, I actually had to turn down the graphics to get anywhere near the benchmark.

Monitor: Acer XB270HU (1440p, 144hz, IPS, G-Sync)
PSU: Corsair HX850i
CPU: Intel i7-6700k overclocked to 4.5ghz
CPU Cooler: NH-U12s
GPU: EVGA GTX 1080 Superclocked overclocked to +100mhz in Precision on Driver 368.81
Motherboard: Asus Maximus VIII Hero
Memory: Corsair Vengeance LPX 32gb (2x16gb) DDR4-2400
Storage: An older Samsung SSD and a 1tb HDD of unknown model/brand (FPS doesn't seem to differ when games are put on different drives)

Does anyone have any idea where my FPS might be going, or how to find out?

I understand it could be a software thing, so here's a few things to help diagnose that potential.

Were the benchmarks done with the same variant of the 1080 GTX with similar overclocking settings? Also, if you're looking at, say, NVIDIA numbers, keep in mind they would be posting the optimal results.
