I just made a build with an i75820 and a GFX 1070 with 32 gig for work in Unreal Engine.

Since this runs desktop and the engine via the GFX would there be a reason to use another GPU, a very small one for 100 bucks or so, for running desktop, editing software and so forth that does not use the GPU?

I am asking because my laptop has 2 gpu, one small integrated that is used on desktop tasks, and one for heavy editing and 3D software. So the geforce in the laptop is idle a lot of the time, and I can effectively work in Unreal Engine without using the CPU, while using the CPU for simultaneusly soling editing tasks and other issues.

Would there be a reason for 2 cards for that specific purpose?

FIY I Cannot use SLI in unreal engine, so that is not what I am asking.

I would not bother. The 1070 should have no issues keeping the engine editor and desktop all running.

Switchable graphics and things like virtu and similar(these features use the on die cpu video card not a second card in the system) have good and bad points. On a notebook it saves power and on desktops it did similar when setup right(It could also be used to access the Intel encoder for video editing). It also had a small performance hit in some cases(virtu did). It just adds another layer of complexity to the system as well.

Your 1070 will also clock down pretty low when you are just on the desktop. This will save power and generate much less heat.
