Please help me upgrade my PC

So here is my current build:

Motherboard: ASUS P8Z77-V PRO
Graphics: 2x ASUS GTX 680 DirectCU II TOP in SLI
RAM: (4x4) 16GB Corsair Vengeance 8GB DDR3 1600Mhz
Hard Drive: Seagate 1TB Hard Drive - 7200RPM, 64MB, SATA 6Gb/s
Samsung 850 EVO 500GB SSD
PSU: Corsair AX860 80 PLUS Platinum
Monitor: BenQ GL2450 1080p 60Hz

Okay, so I'm about to head off to school and I was thinking about making a few upgrades to my PC before I go.
What I am thinking about doing is upgrading my motherboard and processor, as they are getting about 3-4+ years old now.
I'm hoping, by upgrading my processor, that my graphics cards will perform better with my system (as the i5 currently may be bottlenecking the 680's) so that I do not have to buy a new one, although I am prepared to do so if need be.

In terms of a new processor and motherboard combo, I was thinking the Intel i7 6800k or 6850k and the ASUS LGA2011-v3 X99-A II. If I were to upgrade my graphics card, I would probably choose the GTX 1080 so that I am ahead of the game for the next couple years. Getiing a new motherboard would force me to also get new RAM, so I was thinking just Corsair Vengeance LPX 16GB (4x4GB) DDR4 2666MHz (PC4-21300).

I was also thinking about upgrading my monitor from my BenQ to an Acer Predator XB271HU or XB271HK. I liked the idea of the XB271HK so that I could have the best of both worlds: Watching 4k movies and then running my games on a lower resolution like 1440p.

Any help with my choices would be greatly appreciated! My budget for the components (CPU/MOBO/GPU/MONITOR/RAM) is around $1250-$2000 so having a $1250 option, $1500 option, and a $2000 option would be amazing! ANYTHING IS APPRECIATED
