Do you really need at least 500 watt PSU for the R7 360 to work well?

Current most high end single GPU systems draw 400W max.

If a PC shutdown then that's because the PSU features kick in to protect it, i.e not built to handle it's stated wattage.

You could run those specs on 200W, and not have a problem.

You won't have to upgrade your PSU to power that GPU.

Work well? No... It will ether work or not. I have an old 350w PSU running my kids computer with a 6950 for about 12 months. Under heavy load the PC would shut down. You dont get better performance with a PSU. Its on or off.

If you post your specs we can tell you if you have enough. PSU brand also plays a huge role.
