question about phase cooling

hi can someone explain why people with phase cooling dont have like 6ghz + overclocks....i keep seeing videos off phase cooling with temps well in to the minuses yet they dont go much over 5ghz why is this .....for example fx 8350 on phase cooler is like -50c and on my stock phone its in the 40/60 why cant they just overclock on phase cooling to like 7ghz .....i ask this because i assume temps wouldnt be a problem as this cpu is ok to 62c and i have never seen a phase cooled cpu get out off the high minuses ,,,,,,just curiios ...i have no plans to go phase cooling just always wonderd
 
Solution
Overclocks are not always limited by temperature.
They are limited by the voltage that can be safely applied.

Below ambient cooling will cause condensation that most motherboards are unable to handle.
