So I have a GeForce gtx 980ti and a i7 4790k 8gb of ram and I'm getting 200 frames on minecraft sometimes going down to 100 and with a 144hz moniter that doesn't look too good I watch YouTubers like gloryblade98 who has a 980ti and i7 4790k with 16 instead of 8 gigs of ram and he's gets over 1k fps at almost all times.

Solution
This could be related to your GPUs heating up. Does this fps drop occur after long periods of gaming? If so you might want to get a better cooling fan or check your existing one for any problems. Also, sometimes the CPU usage can skyrocket when playing massive world games like Minecraft, causing framerates to drop ,so that may be an issue.

I think I'm pretty sure what your problem here is. Have you set everything in the graphics menu to max? Including the number of chunks? The chunks option is kinda buggy and I have to keep it between 8-11 chunks. Any higher and the game starts to have a framerates seizure. If it's any higher that the above values, I suggest that you reduce it slowly and one value at a time to see if that solves the problem, don't worry, there are almost negligible effects of reducing the chunks.
