Could a factory overclocked GPU be unstable ?!

I have to downclock my factory overclocked GPU in order to play GTA V (It crashes after about 30 min if i don't downclock) although the GPU is stable in Heaven Benchmark with the factory overclock and even with a 116% Power Limit, +75MHz Core Clock, and +250MHz Memory Clock (using MSI Afterburner) while if i run GTA V with 116% Power Limit, +50MHz Core Clock, and +200MHz Memory Clock (to make sure the overclock is very stable) the game crashes immediately.

Some people said that GTA V makes the GPU run at its maximum power and that it's a good game to test your overclock, so i tried running it with 116% Power Limit, +0MHz Core Clock, and +0Mhz Memory Clock so that if my GPU requires more wattage in order to be stable gets them. But unfortunately it crashed. Then i tried 116% Power Limit, +75MHz Core Clock, and -50MHz Memory Clock and it never crashed since.

This means that it has something to do with Memory Clock, so i tried monitoring it and then i noticed that the Memory Clock (which is 3445MHz after reducing it -50MHz in MSI Afterburner) reaches 3499MHz sometimes while i'm playing (i don't know how) which made me think that maybe when it's at normal speed (3500MHz) it also increases at some point which gives me a crash. But does that mean my GPU isn't capable of even +50MHz Memory Clock? It doesn't matter to me even if i stay -100MHz i just want to know what's going on :D

Thanks in advance :).

GDDR5 is already highly overclocked. You might notice that a lot of GPUs, will list like 7004 Mhz. Which is barely significant, just shows how much they are already pushed. 5000, 6000, 7000, and now 8000 (on Pascal) are the best they can manage. GDDR5X runs at 10000 (or 2500, 3000, 3500, 4000, and 5000)

Sounds like you just have memory chip or two that doesn't like to go fast. Not a big deal, just keep that core overclock and be pleased with the performance.

No reason a stock factory default card can't be unstable either, all about incoming power, temperature, and the stability of the rest of the system.
