Help deciding which processor to get for my gaming/recording build

I am building my first PC, it will be for recording console gameplay, video editing, and some casual PC gaming.
I am trying to decide which processor to buy.

My options are:
Intel i5 6500 ($200)
Intel i5 6600 ($215)
Intel i7 6700 ($300)
Intel i5 6600k ($240)

I know that spending more will be better but will the lower ones be good enough for what I need?

Here is my current build, I can adjust if I decide to go for a better processor

OK, you can go for at least i5 6500.
Skip i5 6600, it is better to go directly to i5 6600k, if you want.
i5 6600k is nice but not a must.
Definitely no need to go for i7 6700.

I'm not sure what "heavy work" would be defined as, but I'm pretty sure what I will be doing will be light editing.
It will just be editing gaming videos I record (mostly from console) - trimming, adding music/sound effects, minimal animations, pictures.
Nothing really advanced atleast not for a while.
 
Your build needs a capture card. The capture card will do all the heavy work when it comes to capturing gameplay. You can even use it to capture PC gameplay. This will largely eliminate the need for a ultra fast CPU. Video editing will be fine under any of those CPU's.

So if budget is a concern. Get the 6600k or the 6500 if money is real tight. Then add a capture card with a hardware encoder.

I forgot to mention that I have en elgato HD60 for recording

You will be editing videos on on 1080p? or 4k?
You will be editing videos as professional or because of your job? or just as a hobby?
If you just doing stuffs only as hobby, i5 6500 is already sufficient. But, if you are doing things seriously, only at least an i7 6700 will do the job.

...and...do you know that E3-1230V3 is a i7 6700 without the iGPU and also noticeably cheaper than i7 6700?

It is a hobby, gaming videos for youtube, it will be 1080p.
