As said in the title, could I have 2 1080s in SLI, but different manufacturers and models? For instance, could I have an ASUS STRIX 1080 in SLI with a Zotac AMP! Edition 1080?

Yes you can , you can mix brands and model of 1080 for SLI as they are identical in vram
