Seeking Community Advice on Final Build components

Hey all, I'm in the long stretch of things with finalizing my future PC build for the end of the month.

Now I know a lot can change from now till then but I would like to put my mind at ease, solely on the grounds, I think I researched this to the point of no return and merely would like the opinion of some seasoned builders.

My question is; Which combination would perform better overall?

6700k + 1080 or 6800k + 1070

To make life easier, I don't really plan on OC'ing and 4K gaming isn't really all that important either. Understandably I could easily buy a RX 480 or 1060, I simply want to invest in a strong GPU. The system will mainly used as Multimedia System ( Music + Video Creation, and will be focusing on gaming and streaming, the PS4 isn't doing it for me anymore )

I know someone is probably going to just suggest a 6800k + 1080, which I would love to do but I'm trying to make sure it doesn't go above my budget $2000 - $2500 CDN.

So any suggestions at all would be very much appreciated.

Also just to humor the masses:

This is currently what I'm trying to work with so this is pretty much a serious & much needed upgrade:

Processor: Intel® Core™ i7 720QM 1.6GHz (2.8 GHz Turbo Mode, 6MB Cache)
Memory: 6GB DDR3 at 1066MHz
GPU: CrossfireX™ 1GB ATI Radeon™ Mobility HD 5870
Hard Drive: 640GB Raid 0 (2x 320GB 7,200RPM HDDs)

Just get the 6700K processor for the video card it depends on your monitor resolution and refresh rate. For any 1080p (any refresh rate)and a 1440p with 60 refresh rate then the GTX 1070 would be your best buy. For 1440p with a 144 refresh rate then the GTX 1080.
