I am building a new editing rig and had a question. Would I be better to run multiple cards in SLI or Crossfire for extra processing power or go for a single card with more memory?

For any type of editing a single high memory card is much better than SLI. For Rendering, depends on your software. Blender for one doesn't actually use SLI, instead it can use each card independently even if the cards are not configured for SLI or even incompatible (like a 1060 with titan x)
