I will use Asus Strix GTX 980Ti OC Edition with my non 80 plus Cooler Master RS-B500, 500 watt Psu. Is it possible that I may encounter problems like FPS dropping or stuttering in the games or is it good to go?

think you will find problems more like pc crash due to power failure or something like that, you need a more powerfull PSU in order to run that GPU, and the rest of the computer (that you don't specify)

That 500watt PSU is cutting it close, If I were you, I'd get another one. Personally, I'd get 750+ minimum
