I am going to buy a gaming laptop and should I get a 1Tb HDD+ 128 SSD or just a 256Gb SSD. I will use this laptop for gaming and a bit of studies.

256GB SSD + 1-2TB HDD.

A single 256GB is too small. for the only drive.
A 120GB SSD is too small (IMHO) for the OS and application drive.
It will work, but you'll be managing that space too much.

It's either the 1tb HDD and SSD or the 256gb SSD due to the budget so I'm leaning more on the 1tb HDD + 128gb SSD.

As it turns out, I also bought a Y700.
Nice machine.
I wanted a dual boot system so I replaced the hard drive with a ssd.
You CAN customize, but I think the packages will usually turn out cheaper.
There seems to be no accounting how they are put together.
Sales are frequent; look for deals.
The ssd is in a M.2 form. The OS will be on a 120gb ssd by default.
The hard drive is a conventional 2.5" sata drive.
The list price differential does not seem to make it worthwhile.
They charge $100 for 120gb, $200 for 240gb, and $400 for 500gb.
If you want a 500gb ssd for the os, along with a 1 tb drive, it is cheaper to buy the laptop with only a 1tb hard drive and clone the os to a 500gb m.2 ssd which costs only $168.
It is really easy to take things apart and add ram or change out.
The only caveat is that the screws are tiny.

All this info is probably useless to you.
You are likely to be far better off buying one of the better pre packaged offerings.
