I have two kinds of 6+2 cables? Which do I use?

Solution
You should use the 8 pin socket on your PSU. The cables are the same but having more pins on your PSU socket helps in case you overload a PSU connector. So in your case you should use the 8 pin cables with the 8 pin PSU socket and use the 6 pin PSU sockets only when you are planing to use the 6 pin connectors on a GPU.

Ahh, I see. So, if it's an 8-pin GPU always have the same number going into the PSU? Makes sense xD. Just curious, if were to use the others, what would happen (not that I will)? Not enough power would be fed to the GPU or something? Out of curiosity, what are the 6 to 8 cables used for? o_O Thanks

If you went from 8 to 6, nothing whatsoever(i just simplified teh answer). By going from 6 to 8, it depends on how teh wires are setup.

How many connectors does each cable have, one or two?

Nothing will happen if you don't overload a connector and you don't pull the maximum wattage out of it. By having more cables gives you more options and more versatility for connecting more than one GPUs and mixing the cables but you should be prepared and know what goes where. Say you have a GPU with one 8 pin and one 6-pin. You should use on that case one 6pin and one 8 pin socket from your PSU.
