Windows 10 transfer to SSD while keeping games and files on HDD

Hi, so I got a spare ssd that I would like to use as my boot drive, however I currently have a normal HDD as the boot drive and would like to know how to keep all of my old files/games and only use the ssd for booting. I have over 2tb of games and files and it would be difficult to install all of them again. I heard that you can unplug the hdd and install the os on the ssd and replug the hdd but will I be able to start the games and use the files I currently have on my hdd?

use windows media creation tool and 8g usb stick. make a bootable usb stick. unplug the hard drive and install the ssd. you have to remove all of the partion in advance mode install. if the ssd has any. also dont install windows key click skip. windows when it logs into the internet will pull your key for you. on your stream games just point steam to the old game folder on the old hard drive and it pull all your games back in.

How will I be able to delete windows off of my hdd?
And will there be conflicts with opening and using existing software?
I have a lot of softwares and games on the hdd and wiping off the drive isn't an option
