What do you think about this build. Is there something I should be changing? I intend to start buying it in parts soon and then dumping the rest of the money on it in February when tax season hits.

A hell of a build!

I would change the SATA-SSD for a PCIe M.2 drive, seeing as money is no concern.

Also, a 1000W PSU is overkill, IMHO. 750W should be more than perfectly fine.

RAM: i would rather use 2 x 8GB. The CPU is dual lane, that way you can later add 16 more GB.

Again: awesome build, i want one!

PS: Also, seeing as you plan on buying things overtime, leave the mobo+CPU+RAM for the end, as Kaby Lake (next gen Intel CPUs) are around the corner, and so is AMD's Zen.
 
1000W PSU is serious overkill.
an M.2 SSD would be indeed nice
as for 2x 1080 I wonder which kind of displays you're powering as this would be sufficient for... 8k gaming?
you might wanna consider going for the Pascal Titan instead or 1x 1080 all along (depending on your screen setup)
