2 sticks versus 4

I have tried to do some research and what I have come up with is that you should get two sticks so you can upgrade in the future, but I was thinking about going with 4 for the "looks" of it.

However I am going to be using windows 7 home which only supports up to 16gb max, and I really don't see myself upgrading my OS later down the road because I don't like 8-10. So assuming I never upgrade my OS will I notice a difference by going with 4, 4GB sticks, or am I going to see better performence out of 2 8GB sticks? Also just to help people better help me, the MOBO I was planning on using is the Asus Z170-A

Also as a side question, since I want to make the best gaming rig I can, and I have seen people say that windows 10 is a better gaming OS, should I just bite the bullet and get Windows 10?
