What is your budget in NZD? Are you shipping from the US?
There are some components that could be improved such as the monitor.
Go for 1440p 144hz G-Sync IPS instead of 4k, it is not quite viable.
I'd wait until the GTX 1080ti releases if you want to do a 4k build.
A 1600w is excessive, it could actually damage your wall socket.

if you think a 1600 watt psu will damage your wall socket you have lost all credibility it will pull no where near enough amps to damage anything!

get a 1440p 144hz g-sync tn panel 1ms gray to gray insead of 5ms that youll get with an ips panel and get at least a 1200 watt psu if you plan on having 2 1080s in sli and any overclock at all and it will work great

If you live in a less urban area, and the wiring isn't great, it can absolutely cause damage...
Note that I said it COULD, not that it will.
Here's what I've got for you OP.
Includes 1080 SLI, an IPS 1440p 144hz G-Sync monitor, great cooling and a top end motherboard.
You don't even need to spend your entire budget!

even with bad wiring you should get 15 amps (which is actually more than that before any damage what so ever would happen) which as i said is more than enough for a 1600 watt psu

Even for a 4.8GHz overclocked 6700k and overclocked SLI 1080s, 850w is more than enough.
An IPS panel will also offer much more vibrant colors over a TN, and you will not notice the 5ms v 1ms response time.
