What RAM can I use?

First look at the memory support list you can download from here: http://www.gigabyte.com/products/product-page.aspx?pid=3970#memory%20support%20list
Other memory may or may not work. Faster RAM usually works but not always.
You'll be better off to get 2X8Gb than a single 1X16Gb because the 1X16Gb won't run in dual channel mode so you will effectively cut the RAM speed in half. It takes 2 sticks to get the benefit of DDR technology.

http://www.kingston.com/datasheets/khx1600c9d3k3_12gx.pdf This RAM is on the list as being 1333mhz (and not in the downgraded section) but it is actually 1600mhz, it has the same specs as this ram: http://www.kingston.com/datasheets/kvr1333d3n9_4g.pdf and this ram I can get very close to me.

2x4GB or 2x8GB DDR3 in non-ECC unbuffered DRAM should be fine - get all the DRAM in a single package

Just making sure haha they also have this ram on the mobo list: http://www.kingston.com/dataSheets/KVR1066D3N7_4G.pdf
This is the 1066 mhz version of this: http://www.kingston.com/datasheets/kvr1333d3n9_4g.pdf right?
The only difference I could spot was PC3 8500 and PC3 10600 besides the timings and speeds.
