I have bought 32 gb of ram for my 2000$ pc build. I will be doing gamiing and heavy editing/animation and sometimes be doing many things at the same time (such as rendering out videos and doing other heavy stuff in the background. Would I ever use the 32gb RAM or should I have gotten 16gb?

(Its DDR4 2800MHz)

Solution
32GB of RAM is definitely the way to go with editing.
High frequencies also help it out quite a bit.
What parts do you already have, and what have you yet to buy?
What is your remaining budget?
I'll put together a build for you.

There's many ways to use 32 GB RAM and beyond. Aside from gaming, for example, I run a lot of virtual machines in VMWare on my system and use more than half of my 128 GB.

High res encoding, editing, CAD applications etc. can also be massive resource hogs, as can SQL DBs if you run any of that as well :)

I have already ordered everything and ive finished building my PC running an MSI GTX 1080 and an I7 6700k. I kinda wanted to go with the 6800k because it had more cores but it would make that much of a difference and I used up my budget already. Im also using a 500GB SSD.

Quick question, will installing Sony Vegas Pro, After Effects and Cinema 4D onto my SSD make them run faster? By how much?
