Is everything compatible?
Does the case have room for everything?
If I lower the ram to 32/64 will it make a big difference?
How could I lower the price but with small differences?
I want to build this PC irl and still play new games for at least 5 years.
 
Add a SSD.
Go for Corsair 750D case it is very spacious
Good choice going for TITAN X PASCAL SLI instead of GTX1080 SLI
At present 32GB RAM will be enough.
Go for Corsair H series cooler(its safe to have Corsair water-cooler as they provide great customer and warranty service) to be safe.

and is a normal TITAN X Pascal better than the best custom 1080 (overclocked by asus/evga/etc)?
 
Don't remove the fan part just remove the the part that contains rad unit and replace the rad with hybrid unit you are good to go.
No need to remove the fan unit. You are good to go with HYBRID. Follow everything in the video carefully just leave the part where he removes the fan unit and you will face no problem.
