As long as the PSU is of otherwise decent quality and adequate rating, it should be fine.
However, PSUs that lack 2x 8-pin connectors tend to lack at least one of those attributes, so it generally isn't recommended.

In that case, re-purposing the 6-pin cable as a 8-pin should be fine. Still wouldn't hurt to know exactly what the PSU model actually is.
