For this one I have three I can't decide on (Im a little worried about the 1060s vram)
(The SSD for both is $55)

Whichever one I get I am going to be gaming on it at 1080p high settings.
Some of the more intensive games would be BO3 and BF1/4
If you have any other recommendations I am trying to stay around $500 (I don't include a case)

EDIT: I need the parts to be available in the STL Microcenter
 
Solution
1. There is zero reason to buy into the AMD line at this point in time. It is an old socket with no upgrade path.
2. Do not buy that PSU
3. There are better SSD's, for not much more money.
the PSU is one of the worst branded units possible, don't get it please.

get this one as it is one of the best units out there and usually costs double of that and also will have enough power to survive builds if you at any point should have more money to upgrade to a way nicer build

I've looked around on microcenter, there is no PSU worth buying below 70$
everything below is garbage and potentially dangerous

regarding the build, go with Intel

getting a DDR3 skylake board pretty much makes no sense unless your budget is so tight that you need to/want to reuse your old 8GB DDR RAM from your previous build
that PSU is almost as bad as the CM OP listed and is basically asking for problems. even Corsair doesn't recommend it for use above 30°C.

He had a budget of $500. Also I'm running a CX 750 and have no problems...
 
Good to hear.
But when you look around the forum here, people who got problems related to the PSU mostly state they got a Corsair CX PSU, strangely they never have a Seasonic or a XFX.
So while I'm happy for you you didn't run into any troubles (chances are the 700W PSU is just such an overkill in wattage that the components stay relatively cold and idling) this shouldn't account as a general recommendation for that PSU as there are many people who aren't as lucky.
Even with a 500$ build there should be 25$ left to get a decent PSU
