I was trying to choose a CPU for my Asus P5B motherboard, intending to pick one up 2nd hand off Ebay.
The Asus website lists a range of compatible CPUs at
https://www.asus.com/Motherboards/P5B/HelpDesk_CPU/.

Some of them are listed as 'beta' or 'beta support FSB1333'. What does the beta refer to?
Are these to be avoided if I want a trouble-free upgrade?
What would be the fastest/best one to choose?
Thanks in advance for any advice/info.

It means those CPUs are only supported on a Beta BIOS, probably because the motherboard manufacturer didn't want to put resources into doing any further updates to a discontinued product. Beta BIOSes usually work okay but you could run into issues if it doesn't play nice with some piece of hardware you're using in your system.
Yikes, that's an old board. What do you intend to use it for?

A Core2Quad Q9xxx would be your best bet, but most socket 775 CPUs are getting old and outdated enough that they go straight into the trash. My elderly father still uses one for web browsing, but they're not any good for modern games.
