If you plug a monitor into the APU, it will use the APU. If you plug one into the card, it will use the card.

No, it will use the APU's integrated graphics (assuming you didn't turn that off). But afaik you can't use multiple graphics adapters in parallel (if you have two separate GPUs in one system, only one can be outputting frames for the system). However, you CAN run two VMs in parallel, one using the dGPU and the other the iGPU. This would require splitting your CPU's cores and your system RAM between the VMs too however.
