I tried out the Sapphire RX 480 and a MSI GTX 1060 and the temperatures were higher in the RX 480. Both were under load.

RX 480 Temp in Celsius:78

GTX 1060 Temp in Celsius: 62

Can someone explain to me why this happens?

Could it be the material used?
Wattage?
etc.

I can't answer with only those specs. I need to know what coolers they're using, are they reference or aftermarket?

Typically the 1060 will be lower temp anyways because it's TDP is 120W vs 150W.
The thing to remember is, these cards can safely run at temperatures below 90. And while it's nice to have plenty of headroom for overclocking, you shouldn't always assume the lowest temperature is the better GPU......but the 1060 6GB is generally better than the 480 :)
AMD often have the hotter cards, but with a good cooler it doesn't have to be the way. It's mostly due to the higher power usage between them and an NVidia card of the same performance.
