the i7 6700k is overclockable, the i7 6700 is not overclockable, overclocking is a proccess by which, if you have the right equipment (z170 motherboard, good power supply, aftermarket cooler), you can increase a cpu's clockspeed, thereby increasing its performance. It also has a .5ghz higher base clock that gives it about 12%-15% better performance than the non-k variant without overclocking at all. It is also worth noting that the i7 6700k does not come with a cooler so you will need to buy a separate one.
The i7-6700K has an unlocked frequency multiplier, meaning it supports multiplier overclocking when paired with a Z170 chipset motherboard. That requires an aftermarket CPU cooler. The i7-6700K also has a higher stock frequency, meaning even if you don't overclock it, it is still somewhat faster.

Good point, I guess it really depends on what you want to use it for, browsing will not be any faster but CAD and engineering applications will be.
