LinuxMint-17.1-mate-32bit.
ASUS A7N8X-X mobo 3 - 1GB DDR PC3200

All sticks report 1 GB individually, but only 2.5 GB when all 3 are installed. I get 2 GB when 2 sticks are installed. BIOS reports 2.5 GB RAM at startup. I remember Early Windows could only access up to 2 GB of RAM. Could this be a BIOS limitation? The mobo is supposed to support up to 3 - 1 GB sticks.

I know this is 4 years old, but I just ran into the same problem.
I've had 1GB + 256MB and upgrade to 3x1GB. But I only get 2.5 GB of RAM.

The solution: Enter the BIOS, go to "Advanced Chipset Features" and change "Graphics Aperture Size" from 512 MB to the 32 MB.
The you'll have 3 GB of RAM available.
From what I've read the Graphics Aperture Size is the part of RAM that can be accessed directly by the graphics card via AGP-Bus . If you have sufficient VRAM this value can probably be set to the smallest possible value.

Don't know why the RAM gets reduced by this. This shouldn't happen. It's not dedicated VRAM.
