i7 6900k VS i7 5960x Just for Gaming purposes?

which of those two is the best one for just gaming purposes combined with a GTX 1080 in SLI?
the other considerable CPU is the i7 6850k. I am gonna do water cooling tho.
One of the games that I will play the most is prepar3d (flight simulator) and thats also the purpose of this PC.

After some googling, it appears that more than ~2 hardware threads shows minimal benefits in prepar3d, as it's not well threaded. For that reason, a $60 4.8GHz Pentium G3258 would probably beat a 6900K. The best chip is actually "neither", you should get an i5 6600K or i7 6700K and overclock the snot out of it. The extra PCIe lanes on LGA2011v3 are basically irrelevant, as are the extra cores (for your use), and you give up both clockspeed and performance per clock (the only factors that really matter) to get these things, when compared with LGA1151 CPUs.
