i have a 4790k setup but at the moment i dont have a gpu or monitor,. I can get 2 x 480's in crossfire and a 29" ultra wide monitor with free sync for the same price as a gtx 1080. is team red the way to go??? also how would a 2 x 240's do with a htc vive?

For 29" UW (probably 2560x1080) you don't need any or those.
A GTX 1070 (and even 1060) will do the job. Well a single RX 480 will handle it too.
You want to avoid the multi GPU setups due to the not perfect support. Some games don't scale, some experience glitches that make the game unplayable, not to mention that some games do not support multi gpu and others do not support it on day one. In addition to the software issues, you will have to deal with heat and power consumption. In your case - 750w of good PSU would be the minimum. Dealing with heat and thermal throttling might be fun.
If I would get a cheap pascal card (with decent cooler) as performance will not be different with those like AMP Extreme, FTW.

Imho, you can get the 1070 + the monitor within same budget
