Yes, you should be fine with the GTX 1080. The PSU can support it, and the CPU should be able to keep up with it.

"Bottleneck" comes in many flavors. But generally, we have a battle between the GPU and CPU. One can not keep pace with the other, slowing down the performance of games. Usually it is a CPU that isn't fast enough to allow the GPU to operate at 100% usage. As long as your GPU can run at full usage when needed, there is no CPU bottleneck.
In your case, I'd feel that the Ivy Bridge i7 is going to be right at the margin in its ability to allow the GTX 1080 to run at 100% usage when needed. But there is another thing to consider. Your screen resolution and the v. refresh of your display. If you game at 1080p/60 Hz, chances are you will never have to worry about bottleneck. Even a lesser gfx card can run today's games at 1080p/60 fps with max settings.
