I have just bought a new pc case (gamemax gm-one) and the case fans with LEDs are molex. I was wondering if I could convert the 4 pin molex to 3 pin and plug them into my motherboard. Will I be able to control the fan speed?

Manhattan 330411 power cable - power cables (Molex (4-pin), Molex (4-pin) + Fan (3-pin), Male/Female) https://www.amazon.co.uk/dp/B000234T1Q/ref=cm_sw_r_cp_apa_UIS2xbEXPHN9K is the converter from molex to 3 pin I would like to use. Do I need 1 of these converters per molex fan?

Thanks

Check your MB manual to see the MB can control the fan speed by voltage or not, because the 3-pin is controlled by the voltage, and not all the MBs can do it.
And yes, you need one adapter for an individual fan. If the MB can't control the fan speed by voltage, then just plug the fans into the PSU. Or buy the fan controller.
