my full setup looks something like this. TOTAL $673

I was thinking maybe going with an overclockable MOBO and a 6600k
and putting it in an NZXT s340 keeping everything else the same. what else do you think is the next thing i should do, i need to work with very basic video editing and the i3 is meh

Depends on what you are after. If you want speed now, an i7-6700k is pretty hard to beat for per core performance. A Xeon or i7-6700 wouldn't be much slower.

An i5-6600k not overclocked would certainly be faster then the i3, but not as much as you would think. Since many processes are still primarily single threaded. Once overclocked it is roughly the same performance as the i7 in anything that uses up to four threads. Beyond 4 threads and the i7/Xeon hyperthreading will start to make a difference.

For basic video editing, you would need to look at your tool to see if it is multi thread capable at all. Otherwise you won't see anything passed the clock and cache improvements.

Basically just a cheaper i7 without graphics. But double the CPU cores / threads of an i3.

Also a fairly cheap quad core Xeon without hyperthreading.

Even an i7-6700k isn't a bad choice on your motherboard. Aside from needing a heatsink it has a very high base and boost clock even without overclocking.
