Multi-Monitor non gaming video card.

I am putting together a quite micro ATX system for our congregation.
I am looking at the following items in the system:
Asus AM1M-A Micro atx AMD board
AMD Athlon 5150 Quad core 1.6ghz
Gskill NS series 8gb(2x4gb)
WD 1tb green drive
Rosewill 400w PSU

What I cannot decide on is a video card. Let me explain what the card will need to do then if I can get some advice on what to look for in a card. Currently we have a laptop hooked up via HDMI to an HDMI signal splitter that feeds 2 TVS and a projector. I need to keep this HDMI feed so the card must have at least 1 HDMI out. I then need to feed 2 monitors at the sound area with 2 separate screens. This is all going into a micro ATX case for a small footprint so I can't go overboard on the gpu
I know most multiple output monitors can do this but I'm just not sure how well they will send 3 separate video signals(including playing 2-3 separate MP4 videos on said screens). I am also unsure if I could just add in a USB to VGA/DVI to the current laptop to add the 3rd screen.
