Hi,
I was looking to buy the Xbox one S controller for my desktop PC. Problem is... my gigabyte motherboard doesn't have bluetooth.
If I get the xbox one wireless adapter will it work? Or what if I get a bluetooth adapter? and which will work? Or can i just plug it in if nothing else works?

It will work with the one adapter and a Bluetooth adapter. I have not seen any comparisons but the standard one wireless connection is very low latency, I have some doubt Bluetooth will be as low. Now that's a guess and if true may not be material just Microsoft made a point of the one controllers being the lowest lag of any wireless controller.
