I see that in benchmarking the 850 pulls out 34% more effective speed but is it really noticable in real time use vs the 750? Also if anyone can provide me with some more detailed info about each better thing about either one and if it really pays out/you can notice it.

No, you really will not notice any difference unless you are using it for really disk intensive work, like as a scratch disk for editing video in Adobe Premiere.

For general use, I really don't notice the difference between my original 80GB Intel X25-M and my latest Samsung 850 Pro.

Many people rely way too much on benchmarks, while in reality most SSDs are indistinguishable in general use, but are much faster and easily noticeable compared to old spinners. It's an ePeen phenomena IMO.
