I have a $1,200 budget. I don't want to overclock. I'm new to doing this and haven't built a PC before. I keep finding bad reviews for every part I would like. I don't know what power supply and monitor to get.

Everything seems great. Even though you aren't going to overclock I'd buy a cooler since the
stock one can get loud usually. Ill have a link for two of them below-

Personally I'd switch out the GTX 1060 for a RX 480 since it has more Vram , supports crossfire for down the road upgrades and performs better . Todays games the cards are head to head on DX 11 give or take 3% difference. But now games are coming out with Vulcan which the RX 480 supports, It makes the RX 480 a no brainer choice over the GTX 1060.
