Can I run an nvidia card for gaming and an amd card for extra monitors?

Thinking about upgrading my main gpu for gaming. Currently got an r9 270x for my gaming monitor, and a low profile r7 card for extra monitors. Could I upgrade the r9 270x to an nvidia card but still use the r7 for the extra monitors?

Yes. As long as there is a gfx driver installed for each card, they will work. I've even let a 2nd card simply run off the Windows generic driver.

Maybe I didn't make this part clear, so my bad, but both of my cards now use the same driver as they're both AMD cards. What I'm curious to know is if I can use the Nvidia card with an AMD card at the same time.
