I want to make my own cables that connects to my motherboard, gpu, etc. from my PSU so that way it looks all uniform and nice, but while looking for tutorials online about how to cable sleeve, I notice that the tutorials that I've found use the same exact color cable, which is black. I've found pictures (like this one) that describe different cables and volts. (I guess that's what it is?) I understand the process on how to cable sleeve, but the color cables are really confusing me and I don't want to blow my system.

Does that mean that my motherboard cables need different colors instead of it all being black? If so, where and how do I get those? Would I connect them the same way as other cables? Help is appreciated.

For our intent and purpose...

Each wire is very specific and very different. If you mix the position of the wires you could be in very big trouble.

Most people who do this simply remove one cable from the head, sleeve it, put it back exactly where it was. Remove wire, sleeve it, put it back exactly where it was.

This way you don't need to know absolutely anything about anything, you just put it back exactly how you found it, only with sleeves.

That's what I was going to do in the first place, but the problem is that my motherboard power cable is way too long. Can I cut the cables and then sleeve it?

You should be routing cables behind the motherboard tray and then back up and around to plug into the motherboard, i would highly advise you not shorten them, as you can just hide extra wire.

If this is an ITX build or something extremely small then yeah, sure you can trim the wires down, but now realize you need to reattach the... little pin things, can't remember what they are called, and introduce a huge slew of potential problems.
