Just recently decided to check the current temperature of my CPU because i was geting a warm feel from the case, to my surprise i found out that when the system starts it can pull to 80°C in a matter of seconds, then started to play my usual games (black desert, GTAV, BF4 and FF14) and found out that i was pulling 95-100°C and no more, it never went above 100°C and it was often between 90-95°C, however i feel that this is not a recent issue i just became aware of it because i been playing like that and never got a BSOD or shutdown, and my game session usually last from 4 to 10 hours.
I changed the thermal paste, changed the cooler Hyper 101 to the stock one and back again, i have 3 extra fans in the case for better airflow and no changes whatsoever, my doubt is if this is normal (due the fact that no errors had been showed on my pc) or is a faulty sensor, because even with the case open i have put my hand near the CPU fan and i dont feel 100°C of air arround it is actually just a bit warm, the air from my GPU is way hotter and even that is showing only 50°C (GTX 970 G1gaming)

I assume that's a Hyper 212. If you were getting 38C at idle, that could be normal depending on your case. Temperatures near 100C are not. Make sure your Thermal Paste is only a very thin layer - that is, enough that you can't see the metal on the cpu, but not thicker than that. The CPU itself would be operating at that temperature, but would not radiate that heat at 100C in the air because the heatsink disperses it over a larger area.

What case are you using?
Which program are you using to measure the temp?
What voltage is the motherboard supplying the CPU vcore when you see this happening?
