I have a budget of $1000-1200 USD
I want it as small as possible (skull canyon looks perfect) but I'm concerned about the lack of dedicated video card. Any photographers out there that think the skull canyon is fine with the integrated graphics? My other concern is lack of future upgrading on the skull canyon...

What's my next best option? I'd like the same ports (3.0, 3.1-A, 3.1-C and thunderbolt), I5 or I7 desktop chip, excellent wi-fi, 16gb ram, 256-512 ssd. etc.

I've never built a computer before and like the simple build aspect of the NUC....but could possibly roll up my sleeves and try something more intense with good instructions. :)

Solution
Overpriced dells, with very limited upgrade capability. You could downgrade to the 3gb version, and get more SSD storage.

If upgrading is a concern, a DIY build is always the better option.

That Asus motherboard doesn't seem to support 3.1 type C or Thunderbolt....I may be able to live without Thunderbolt but not the type C...also the case shows 2 usb type 3.o ports only...

Most cases only have a couple ports, the rest are on the back, on the board. Changed the board to one with type C USB.

Thanks for these quick replies and helpful info! As I'm not planning on any gaming to speak of is there a way to save money on the video card? maybe shift the money elsewhere? keeping it around the same price or a touch lower? I think the HDD is not needed either. maybe I'll add 2nd ssd later.....

Thanks again!

Or get a second SSD, to use as a scratch disk.

Thanks again, this is great. As a newbie on building is there a how-to guide somewhere for these type of custom builds? I'd need a step by step really for my first build!

Thanks I will look into this as a fun challenge....although I just found a note on Adobe that says the Iris Pro graphics are supported....it actually says required....haha. "wording" I'll take that to mean all functions of PS will work....however I assume having a dedicated video card is an improvement

Suggested system requirements and graphics cards:
1 GB of VRAM (Video RAM, or RAM on the video adapter). 2 GB of dedicated VRAM is suggested for large, high-resolution (such as 4K and 5K) monitors.
Graphics cards produced in the last two years that meet the minimum system requirements above should work.

For Intel cards, Intel HD Graphics 4400+, 5000+, 510+, P530, Iris Pro Graphics 5200, 6100+, P6300, P580 or later are required
